(ARROZ CON POLLO)   RICE WITH CHICKEN
 

                                       2 med. onions
                                                1 16-oz. can stewed tomatoes (cut up)
                                                6 chicken breast (more if you like)
                                                1 8oz. jar olives
                                                1 1/2 cup rice
                                                3 cups water
                                                1 1/2 tsp. turmeric
                                                Hot sauce
                                                Salt

                                                       Cook chicken (boil); tear into small pieces (shred).  In large pot, cook onion
                                                in small amount of oil til tender.  Add tomatoes & chicken to onion, simmer
                                               10 minutes.  Add water, rice & turmeric; cook til rice is done.  Halve olives
                                               and add to rice mixture.  Warm through.  Add hot sauce & salt to taste.
                                               Serve warm.
