MANICOTTI-CANNELLONI

Tomato Sauce

2 tablespoons olive oil
½ cup onion, chopped
2 garlic cloves, minced
1 28-oz can crushed tomatoes
½ 6-oz can tomato paste
1 cup water
½ teaspoon Basil
½ teaspoon. Parsley
½ teaspoon oregano
Salt and pepper to taste

Sauté onion and garlic in olive oil.  Add remaining ingredients.  Simmer 30 minutes

Meat Filling

2 tablespoons olive oil
1 lb. Ground beef
1 egg, slightly beaten
¼ cup grated Parmesan cheese
¼ cup seasoned bread crumbs
1 tablespoon chopped parley
Salt and pepper to taste
1 recipe tomato sauce

Sauté chopped meat in olive oil until brown.  Mix with egg, cheese, bread crumbs, parsley, salt and pepper.  Pour half the sauce in a baking dish.  Stuff cooked manicotti-cannelloni with filling, arrange in dish and top with remaining sauce.  Bake in 350 degree oven for 30 minutes.

Cheese Filling

1 lb. Ricotta Cheese
1 lb. Mozzarella cheese (shredded)
¼ cup Seasoned bread crumbs
¼ teaspoon salt
¼ teaspoon parsley
1 recipe tomato sauce

Combine all ingredients except tomato sauce.  Pour half the sauce in a baking dish.  Stuff cooked Manicotti-Cannelloni with filling, arrange in dish and top with remaining sauce.  Bake in a 350 degree oven for 30 minutes.
